Although not part of Mail, it is very useful to copy characters from Character Map into an email. (Character Map lacks Help. It is often helpful to select ‘Group by;’ and then ‘Unicode Subrange’. Then click a wanted character, click Select and then Copy. The chosen characters can then be pasted into an email.)
